From Scratch Perfect Pasta

Prep Time -10 minutes

Rest Time - 30 minutes

 

  • 2 cups (240 grams) all-purpose flour
  • 3 eggs
  • 1 tsp. (5 mL) salt

 

Carefully measure out 2 cups (240 grams) flour. (Do not pack it) Add to your food processor, along with the eggs and salt. Take it for a whirl! It will begin to look like coarse sand, and then it will collect into a ball and clean up the sides of the food processor. If it doesn’t come together right away drizzle in water, a teaspoon at a time until it does. Don’t add too much water or the dough will get sticky. Remove it and kneed it on a lightly dusted countertop for 5 minutes, or until the pasta springs back to the touch. Wrap it in plastic wrap and store the dough in your fridge for 30 minutes. Then you will be ready to start rolling the pasta of your choice!
